Makes: 4 servings (1 salad with 1 pita each)

Ingredients:

PAM® Olive Oil No-Stick Cooking Spray
1 pound boneless skinless chicken breasts
1/2 teaspoon ground black pepper, divided
1/3 cup thinly sliced red onion
1/3 cup raspberry white balsamic vinegar
1 tablespoon honey
1 teaspoon minced garlic (1 teaspoon = about 1 clove)
1/4 teaspoon kosher salt
3 tablespoons Pure Wesson® Canola Oil
2 teaspoons finely chopped fresh tarragon
4 pita flat breads (6 inch)
10 ounces spring lettuce mix
6 ounces fresh raspberries (6 ounces = about 1-1/3 cups)
Directions:
1. Spray cold grill or grill pan with cooking spray. Preheat using medium heat. Season chicken with 1/4 teaspoon of the pepper. Cook chicken 7 to 8 minutes or until juices run clear, turning once. Remove from grill; let stand 5 minutes. Cut chicken into thin strips.
2. Finely mince several red onion slices to equal 1 tablespoon. Place minced onion in small bowl. Add vinegar, honey, garlic, salt, and remaining 1/4 teaspoon pepper; whisk together. Continue whisking and slowly add oil in steady stream. Add tarragon; set aside.
3. Lightly spray both sides of flat breads with cooking spray. Place on grill or grill pan. Heat both sides to crisp. Cut each into quarters; keep warm.
4. Place lettuce in large shallow bowl. Drizzle with dressing; add half of chicken, sliced red onion, and raspberries. Toss to coat well.
5. Divide salad between 4 plates. Top each with the remaining chicken, onion, and raspberries. Serve with warm flat bread.
Cook's Tips
Use prewashed spring lettuce mix found in the produce section for convenience; it typically comes in 5-ounce bags or boxes.
