Ingredients

  • 1 pound new potatoes, quartered (1 lb = about 3 cups)
  • 3/4 cup water
  • 2 slices fully cooked bacon
  • 3 tablespoons light mayonnaise
  • 3 tablespoons cider vinegar
  • 3 tablespoons sliced green onions (white and green portion)
  • 2 tablespoons firmly packed brown sugar
  • 1 teaspoon Gulden's® Spicy Brown Mustard
  •   Lettuce leaves, optional
Directions
  1. Place potatoes and water in medium saucepan. Bring to a boil over high heat; cover. Reduce heat to low; simmer 20 minutes, or until potatoes are tender.
  2. Place bacon on paper towel-covered microwavable plate. Microwave on HIGH 15 seconds, or until bacon is crisp. Crumble bacon; set aside.
  3. Combine mayonnaise, vinegar, onions, sugar, onions and mustard in medium bowl. Drain potatoes. Add to mayonnaise mixture along with the bacon; mix lightly. Serve warm on lettuce-covered plates, if desired.
